Haley Homemaker: Chicken Caesar Wonton Cups

Who else is over these hot summer days? These wonton cups would make a nice lunch or appetizer before dinner. Maybe if you make enough of them you can even have them for dinner! They’re so light and not too filling. Perfect summer food for sitting on your porch or under the gazebo. I’m also obsessed with this chicken marinade. Truth be told, I definitely always double the marinaded chicken part of the recipe to have chicken to eat throughout the week. It’s so simple, delicious, and versatile!

SHOPPING LIST

  • 2 boneless skinless breasts
  • 4 strips of bacon
  • 2 lemons 
  • 2 cloves of garlic 
  • 2 Tbsp white wine vinegar
  • 1/4 cup olive oil
  • 2 1/2 cups chopped romaine 
  • 24 wonton wrappers
  • 3 Tbsp Caesar dressing
  • 1/2 cup shredded parmesan
  • Caesar croutons
  • salt
  • pepper

MARINADE

INGREDIENTS

  • 1/4 cup olive oil
  • 2 Tbsp white wine vinegar
  • 1 Lemon juiced and zested
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  1. Using a whisk, combine all the ingredients listed above. 
  2. Rinse the chicken and pat dry.
  3. Place the chicken in a shallow bowl with the marinade.
  4. Cover and refrigerate for 2-8 hours.

GRILLED CHICKEN

  1. Pre-heat the grill to high heat.
  2. Grill 6-10 minutes per side. This will depend on the thickness of the chicken, and the grill you are using. If in doubt, use a meat thermometer on the thickest part of the meat and make sure that it reads 165°.

WONTON CUPS

  1. Preheat oven to 350°
  2. Spray muffin pan with cooking spray
  3. Place one wonton wrapper in each muffin cup
  4. Bake 10 minutes or until lightly browned
  5. Remove wontons from muffin pan and let cool on a cooling rack

TIPS

  • Keep your eyes on these wonton cups while they are baking. They can burn very quickly, and your oven could be a bit different than mine.
  • I’ve gotten in the habit of making a big batch of wonton cups at the beginning of the week and keeping them in the refrigerator to use throughout the week. As long as you put them in a container with a lid they stay nice and crunchy! I use them for all kinds of fun things; chicken salad, tuna salad—the possibilities are endless! 

SALAD FILLING

INGREDIENTS

  • 4 pieces of Bacon
  • 2 1/2 cups romaine
  • 1/2 cup grated parmesan
  • 3 Tbsp Caesar dressing
  • 2 chicken breasts
  • Salt and pepper to taste 
  1. Chop bacon 
  2. Chop romaine lettuce
  3. Shred chicken into small pieces
  4. Combine all the above listed ingredients in a bowl and salt and pepper to taste

TIPS

  • I would recommend chopping up the romaine into pretty small pieces. The salad mixture fits in the wonton cups better this way. 

ASSEMBLY

Divide the salad mixture between each wonton cup, top with crushed up croutons, a pinch of parmesan and some pepper. Serve with fresh lemon wedges for an optional spritz of freshness.
